Our go to fast(er) food places are Chipotle and Vui's Kitchen. This summer while I was training for the Chicago Marathon, I had a slight case of food poisoning the night before and then again after my run. It was the only long run I did inside, you know, easy access to bathrooms... I needed something that would be easy on my stomach, and Vui's pho was just the remedy. I now associate it with magical healing powers. Making broth from scratch is something I have always wanted to do and was also a goal for this year in my life, this was a great starter recipe to fulfill my goal! (One more thing!! Avocado Toast with Spicy Sauce and Seeds
Last week, we started a new chapter in our lives. We moved to into our first house!! Our house seems to have been built with our family in mind, and our neighbors are fantastic! The kitchen was a MAJOR selling point for us, I finally got the gas range I have been lusting after. Now if I could just get the hang of cooking on it... Until then, we will be eating toast for most of our meals until I can figure out how to not burn everything aside from eggs and soup. It took me a couple of years to acclimate to Nashville summers. No t-shirts (if you sweat as much as I do...), God help us, NO gray, breathable fabrics only, no pants EVER, you get the idea. One night before dinner time, I asked P to research exactly this: 'cold summer vegetable recipes' and 'cold dinners for hot summer days'. We didn't really find much that could be ready super quick. (Sometimes I wait until I absolutely MUST eat within minutes, and that kind of limits things.)

Accidentally Amazing - Quick Veggie Quesadillas
Sometimes life gets hairy and you forget to do certain things that are important to sustain life. Like eat. Maybe you've probably been having hunger pains and grumbles for a while now, maybe they even started around 3:00 pm, but waves of anxiety or worry might have extinguished them. These quesadillas were born out of that exact scenario and were a total accident. An amazing accident that happened after only 30 minutes of effort!! They’re healthy, fresh, full of protein, fulfilling, and bursting with flavor. They will use up that pepper in your veggie drawer and the last few cherry tomatoes.

For me, making food is kind of a neutralizer. Or maybe, normalizer is a better way to say that. In stressful situations it makes me feel like I am doing the following:
- being productive
- providing something healthy and nourishing for someone

Quinoa Black Bean Veggie Burger
Burger Up’s Marathon Burger inspired this recipe, it was the first veggie burger I ever fell in love with. Not to brag, but my husband says he likes these better, so……. I eat one of these guys the day before most of my races if I can (and by most of my races I mean the one I typically run in April).
