A Love Story: Peanut Butter + Cashew Butter
You guys.
Did you know it was possible for the mixture of peanut butter and dark chocolate to taste even more delicious???
GUESS WHAT! IT IS!
We were running low on peanut butter, and I didn't want to use up the rest. I spied some raw cashews in the pantry, so I decided to make cashew butter.
All you have to do is roast the cashews, throw them into a Vitamix or food processor, add a bit of coconut oil and a pinch of salt, and then pulse until a buttery texture is reached.
What a happy accident!
I added the left over cashew butter to the rest of the peanut butter, and we have been devouring it.
Heaven surely smells of freshly roasted cashew butter!!
I followed my recipe for Vegan Dark Chocolate Peanut Butter Easter Eggs and used 1/2 cup of peanut butter and 1/2 cup of cashew butter, in addition to two tablespoons of chia seeds. I also added 2 tablespoons of King Arthur's Black Cocoa to the chocolate before I dipped the peanut butter hearts.
Trust me when I say this - homemade nut butter cups are LIGHTYEARS more delicious than your average Reese's Peanut Butter cup, so you should go ahead and make them ASAP!
