Happy Sunday everyone! Lainee has been doing very well this weekend! Her appetite has been better and she has been very playful! I spoke with the dermatology specialist on Friday, and they are still waiting on the results of the fungal culture. Once they find out what it is, they will have to dive in to the scientific literature and see what has worked for others in the past for treatment. That makes us a little bit nervous and from what she said about her past cases, it sounds like this will be a longer and more complicated journey than we originally thought.
Pumpkin Pie Brioche - First item in The Grateful Plate series!
I have decided to start my first series ever! I shall call it, 'The Grateful Plate'. This series is dedicated to everyone who has shown us love and support during Lainee’s journey! At this point, Lainee’s autoimmune disorders are stable. Her red blood cells are fluctuating, but we believe it is because of the infections. Lainee has been diagnosed with a fungal infection and secondary bacteria infection. The infection is opportunistic, and has developed due to Lainee’s suppressed immune system. The drugs to treat the fungal infection are rare and in special form, liquid, because she is so tiny. Just one week of this medication costs $120 (on top of the costs for the other 8 medications she is on; Mycopehnelate, Cerenia, Plavix, Omeprazole, Atopica (cyclosporine), Prednisone, Carafate, Hydroxyzine). In addition to the cost of seeing the dermatology specialist, we think that treating the infections alone would be about $400 a week. We are hoping that the fungal infection will be treated in a month!
Accidentally Amazing - Quick Veggie Quesadillas
Sometimes life gets hairy and you forget to do certain things that are important to sustain life. Like eat. Maybe you've probably been having hunger pains and grumbles for a while now, maybe they even started around 3:00 pm, but waves of anxiety or worry might have extinguished them. These quesadillas were born out of that exact scenario and were a total accident. An amazing accident that happened after only 30 minutes of effort!! They’re healthy, fresh, full of protein, fulfilling, and bursting with flavor. They will use up that pepper in your veggie drawer and the last few cherry tomatoes.
Positive Self-Talk - Pointers from 3rd and 4th Graders
My earliest memory of negative self-talk, this time specifically regarding my appearance, was in fifth grade. I got a HORRIFIC haircut. I did not want to go to school. I wanted to wear a paper bag on my head, but unfortunately, my mom did not think that was a good idea. I tried though!! There is photographic evidence of that attempt. I thought I looked like Carol Brady.

For me, making food is kind of a neutralizer. Or maybe, normalizer is a better way to say that. In stressful situations it makes me feel like I am doing the following:
- being productive
- providing something healthy and nourishing for someone
- showing my family and friends I love them
Quinoa Black Bean Veggie Burger
Burger Up’s Marathon Burger inspired this recipe, it was the first veggie burger I ever fell in love with. Not to brag, but my husband says he likes these better, so……. I eat one of these guys the day before most of my races if I can (and by most of my races I mean the one I typically run in April).
