Watermelon Cocktail

My little guhl, Lainee Lou Hou, is sick again. I have had a feeling something was off for the past week or two, and then last Monday night I knew something was wrong. I keep replaying the vet's words over and over in my head. "Well", he said, "it seems there is a problem. Her platelets are down to 14,000 and we are unable to find any manually on a blood smear." My heart sunk, my stomach dropped. Lainee's immune system is attacking her platelets again, Immune Mediated Thrombocytopenia is back.

Double, triple, quadruple UGH.

Thankfully this time, we are so much more educated about the disease, which means we know what warning signs to pay attention to and how the medication all works. We knew the medication started to kick in last weekend, their lovely side effects continued to bare their teeth through this week.

On a positive note, Lainee Lou Hou is doing okay today. Last night was the first time since last weekend she slept all the way through the night.

Lainee and I spent half of the day Friday at the vet's office after a sleepless evening. We left with antibiotics, and the vet didn't think she warranted another blood panel. Gooooood news!

Right now, Lou Hou is as hungry as ever, despite losing a pound since last week. In true welshie spirit, she REINDEER JUMPED over her brother's head when she heard me cutting watermelon. Oh how I wish we had caught that moment on camera!

So, to end a particularly stressful week, because Wednesday was National Watermelon Day, and because both Lainee and I LOVE watermelon and we are thrilled she has the appetite to eat it, I thought it would be fitting to share this recipe!

Watermelon Cocktail

Serves: 1

  • 1 - 2 cups watermelon

  • juice from 1/2 a lime

  • 2 oz vodka or sparkling water

  • handful of mint leaves

  1. Add 1 tablespoon freshly squeezed lime juice and mint leaves to a cocktail shaker. Muddle the mint leaves and lime juice together until the mint is broken up into little pieces.

  2. If you have a blender, you can pop all ingredients in there and blend! If you have a strainer, like the photo above, put watermelon chunks in strainer and use a spoon or a fork to press the juice out. Add the watermelon juice to the cocktail shaker

  3. Add vodka and an ice cube. Shake for 30 seconds and then pour over ice. Enjoy!!
